Ayvalık özelinde kültürel sürdürülebilirlik: geçmişten bugüne zeytinyağı fabrikaları

Abstract

Zeytin, Akdeniz medeniyetlerinde önemli bir kültürel ve ekonomik öğe olmayı geçmişten bugüne sürdürmüştür. 18. ve 19. yüzyıllarda başlayan ve etkilerini tüm dünyada zamanla hissettiren sanayi devrimi zeytincilik alanında da etkisini göstermiştir. Fabrikaların ve buharlı makinaların yaygınlaşması ile kentlerin planları, işlevleri ve silüetleri değişmeye başlamış, köy ve kasabalar gelişerek yeni kentler inşa edilmeye başlanmıştır. Ayvalık’ta bu şekilde inşa edilmeye başlanmış, sanayi devriminin getirdiği yeni teknikler ve malzemeler geleneksel olanla birleşmiş, yeninin olumlu ve olumsuzları kenti şekillendirmiştir. 20. yüzyılda da ilerleme durulmamış, bir zamanlar tonlarca hammadde işlenen kalabalık fabrikalar atıl hale gelmiş, kent yeni şartlara göre şekillenmeye devam ederken kentin yeniliğe ayak uyduramayan kısımları terk edilmiştir. Bu çalışmada terk edilerek atıl vaziyette bırakılmış endüstriyel miras kapsamında tarihi öneme sahip yapıların yeniden işlevlendirme çalışmaları Ayvalık özelinde incelenmiştir. Bununla beraber bu yapıların mimari özellikleri, yapıların inşa edildiği dönemde kente etkileri ve zeytinciliğin bölgedeki tarihi de incelenerek çalışmaya dahil edilmiştir. Bu şekilde yapıların geçmişteki işlevi ve kente etkileri ile bugünkü işlevleri ve kente etkileri karşılaştırılmıştır.

Olives have continued to be an important cultural and economic element in Mediterranean civilizations from past to present. The industrial revolution, which started in the 18th and 19th centuries and made its effects felt all over the world over time, also had its effect in the field of olive cultivation. With the spread of factories and steam machines, the plans, functions and silhouettes of cities began to change, villages and towns began to develop and new cities began to be built. It started to be built in this way in Ayvalık, the new techniques and materials brought by the industrial revolution combined with the traditional, and the positives and negatives of the new shaped the city. Progress did not stop in the 20th century, crowded factories that once processed tons of raw materials became idle, and while the city continued to shape itself according to new conditions, parts of the city that could not keep up with innovation were abandoned. In this study, the re-functionalization efforts of historically important buildings within the scope of abandoned industrial heritage were examined specifically in Ayvalık. In addition, the architectural features of these buildings, their impact on the city when they were built, and the history of olive cultivation in the region were also examined and included in the study. In this way, the functions of the buildings in the past and their effects on the city were compared with their current functions and effects on the city.
