Lezzetin nostaljisi: Yiyecek ve bellek ilişkisi üzerine

Abstract

Lezzet-yiyecek-bellek arasındaki mevcut ilişki salt kişisel değil toplumsal yönden de araştırmaya değer bir konudur. Bu çalışmada; lezzet algısı, bu algının kaydedildiği bellek çeşitleri ve gastronostalji kavramı farklı bilim dallarına ait yaklaşımlar sentezlenerek incelenmekte, gastronomi literatürüne farklı bir perspektiften bakılarak katkı sağlanması hedeflenmektedir. Lezzet, yiyecek, bellek ilişkisinin nostalji ve gastronomi bağlamında incelendiği bu çalışmada; geçmişe dair hafızada yer eden lezzetlerin bellekte nasıl kodlandığı, ne şekilde hatırlandığı yerli ve yabancı literatürdeki bilgiler ışığında tartışılmaktadır. Literatürdeki çalışmalara ilaveten, konunun özellikle nörolojik bağlamda daha iyi anlaşılabilmesi açısından, nöroloji alanında, konuyla ilgili çok sayıda çalışması bulunan bazı akademisyenlerin fikirlerine başvurulmuş ve kişisel görüşlerine metin içinde yer verilmiştir. Elde edilen sonuçlar, bireye ait kişisel yemek hatıralarının episodik bellekte kodlandığını göstermektedir. Dolayısıyla gastronostalji kavramını uyandıran/hatırlatan bellek çeşidi episodik bellek olmaktadır.

The existing relationship between taste-food-memory is a topic worth examining not only for a personal aspect but also for a social aspect. This study examines the perception of taste, the types of memories in which this perception is registered, and the gastronostalgia concept by means of the synthesis of approaches from various scientific fields, and that it intends to make a contribution by looking with a different perspective on the literature of gastronomy. In addition to the studies in the literature, in order to better understand the subject, especially in the neurological context, the opinions of some academics have consulted a large number of studies in the field of neurology were consulted and their personal opinions were included in the text. The results show that the individual's personal meal memories are encoded in episodic memory.
