Gastronomi 4.0 kavramı kapsamında nesnelerin internetinin (IOT) mutfaktaki yeri

Abstract

Gastronomi 4.0 kavramının geleneksel yiyecek üretim noktalarında gün geçtikçe daha fazla yer aldığı görülmektedir. Bununla beraber internetin kullanım olanakları ile akıllı cihazları üretim maliyetleri azaldıkça çok daha fazla yerde bulunabilmektedir. Nesnelerin interneti teknolojisi yeni bir kavram olmasına rağmen mutfağın birçok noktasında yararlı işlevler görebilmektedir. Bu çalışmada gastronomi 4.0 kapsamında nesnelerin interneti kavramı ve bu kavramın mutfaktaki uygulama alanları belirlenmeye çalışılmıştır. Bu noktada bir literatür taraması yapılarak bir derleme yapılmıştır. Mutfakta birçok aygıtın uzaktan takip edilebilmesi gerektiğinde bazı komutların verilebilmesi hem karlılık açısından hem de sürdürülebilirlik açısından önem arz etmektedir. Çalışmada nesnelerin internetinin nasıl bir kavram olduğu ve nasıl çalıştığı üzerinde durularak mutfakta kullanım olanakları ile güncel çözümler derlenmektedir.It is seen that the concept of Gastronomy 4.0 takes place more and more in traditional food production points. However, with the possibilities of using the internet, smart devices can be found in many more places as production costs decrease. Although internet of things technology is a new concept, it can perform useful functions in many parts of the kitchen. In this study, the concept of internet of things and the application areas of this concept in the kitchen were tried to be determined within the scope of gastronomy 4.0. At this point, a literature review was made and a compilation was made. When it is necessary to monitor many devices remotely in the kitchen, giving some commands is important both in terms of profitability and sustainability. In the study, the concept of the internet of things and how it works, and the possibilities of use in the kitchen and current solutions are compiled.
