Türkistan’dan günümüze Türk mutfak kültürünün gelişimi: geleneksel Türk mutfağının günümüz yeme-içme alışkanlıklarındaki yeri

Abstract

Günümüz Türk toplumunda geleneksel Türk mutfağına duyulan merak ve ilgi gitgide artmaktadır. Bunda kitle iletişim araçları yardımıyla yayınlanan ve genellikle Osmanlı sarayını konu edinen dönem dizilerinin, geleneksel yiyecek-içecek tariflerini veren kitapların yoğun ilgi görmesinin ve Tarih bilimine olan ilginin etkisi vardır. Ancak bütün bunlara rağmen geleneksel Türk mutfağının günümüz Türk toplumu üzerinde ne denli bir iz bıraktığı bilinmemektedir. Bu araştırmanın amacı, geleneksel Türk mutfağının tarihsel gelişimini incelemek ve geleneksel Türk mutfağının günümüz yeme-içme alışkanlıklarının içinde ne ölçüde yaşatıldığını ortaya çıkarmaktır. Bu amaca ulaşmak için araştırma yöntemi alanyazım taraması olarak belirlenmiştir. Araştırmanın genel sonucu ise geleneksel Türk mutfağının günümüz Türk yeme-içme alışkanlıklarında giderek daha az yer kapladığıdır.Day after day, Turkish Society’s interest and curiosity for the Turkish Traditional Cuisine increases. The reasons for that are the TV series which is about Ottoman Palace that has been published by mass media, the curiosity to the books that includes traditional F & B recipes and the interest to the history science. However, it is not certain what kind of impact that has been left on the Turkish Society by Traditional Turkish Cuisine. The purpose of this research is to examine the historical evolution of Traditional Turkish Cuisine and to reveal the extent to which the traditional Turkish cuisine has survived in today’s eating and drinking habits. In order to achieve this purpose, the research method has been determined as a search of literature. Among the results of the research; Because of situations such as the fast flow of business life, the fact that work often comes before the family, the level of education has increased, economic reasons, time constraints, individuals are often not at home with their family, but outside with their colleagues or alone, it is easy to reach fast food products and It has been determined that the practicality of eating in daily life has led to the neglect of Turkish food. The overall outcome of the research is that the traditional Turkish cuisine is becoming less and less occupied by contemporary Turkish eating and drinking habits.
