Bozkır (Konya) ilçesinde tahin üretimi: Özellikler ve sorunlar

Abstract

Bozkır (Konya) ilçesinde tahin üretimi yıllardır yapılan, babadan oğula geçen sistemle işleyen ekonomik bir faaliyettir. Tahinin ana maddesi olan susamın, ekim alanlarından uzak bir mesafede tahinciliğin faaliyet alanının genel özellikleri ve sorunları bu çalışmanın konusudur. Araştırma sahasında marka sahibi olan tahin üreticileri ile görüşme yapılıp, gözlemler aktarılmıştır. Susam tarımının yapıldığı alanlar haritalandırılıp, üretim miktarları tablo halinde sunulmuştur. Türkiye’de yaygın olarak üretilen beyaz tahinden farklı olarak esmer tahin üretimi yörenin tanıtıcı gıda ürünü olmaya adaydır ve bu konuda çalışmalar yürütülmektedir. Sonuç olarak görülmektedir ki tahin üretiminde atölye tipi yaygındır. Ulaşım, reklam, tanıtımın zayıflığı ve kooperatifleşmenin olmayışı başlıca sorunlardır.
