Living Nostalgia in Flavors: ‘Gastronostalgia’

Abstract

It would not be wrong to say that societies in the cycle of consumption- capitalism-postmodernism especially with the new millennium, have begun to disappear between industrial wheels, files and technology. In the current situation, desires such as going on vacation more, heading to rural areas, taking different hobbies are mostly among the preferences of individuals who want to get away from the stress factor. It can be said that besides the desires to discover new places, meet with nature, live in more peaceful environments, one of the aspirations of today's individual is to experience nostalgia. The concept of nostalgia, which includes the perception of time, space, object and taste in the past, is an emotional bridge for individuals between yesterday and today. Because an object belonging to the past is much more than just an object and it can be expressed as a memory that contains all kinds of emotions. One of the different ways to experience nostalgia is gastronomic elements that appeal to different senses. In this study, the relationship between gastronomy and nostalgia has been examined, the aspirations of individuals for the flavors in their past have been tried to be determined, and it has been aimed to contribute to the literature in the context of gastronomy-nostalgia. Interview questions prepared for determining gastronostalgic aspirations in the research were directed to 19 people face to face among academicians from the Tourism Faculty of Balıkesir University. The data obtained with the semi-structured interview technique were analyzed and interpreted with the help of SPSS 24 and NVivo 10 programs. As a result of the research, it was concluded that the vast majority of individuals longed for the past, and especially the flavor and gastronomic elements belonging to childhood have a meaningful and permanent positive image in their memories.

Özellikle yeni milenyumla birlikte tüketim-kapitalizm-postmodernizm döngüsü içindeki toplumların sanayi çarkları, dosyalar ve teknoloji arasında adeta kaybolmaya başladığını söylemek yanlış olmayacaktır. Mevcut durumda daha çok tatile çıkma, kırsal alanlara yönelme, farklı hobiler edinme gibi arzular çoğunlukla stres faktöründen uzaklaşmak isteyen bireylerin tercihleri arasında yer almaktadır. Yeni yerler keşfetme, doğayla buluşma, daha huzurlu ortamlarda yaşama gibi isteklerin yanı sıra günümüz bireyinin özlemlerinden birinin de nostaljiyi yaşamak olduğu söylenebilir. Geçmişteki zaman, mekân, nesne ve tat algısını da bünyesinde barındıran nostalji kavramı, bireyler için dün ve bugün arasındaki duygusal bir köprü durumundadır. Zira geçmişe ait bir obje salt bir nesne olmanın çok ötesinde olup yaşanılan türlü duyguları içinde barındıran bir bellek olarak ifade edilebilir. Nostaljiyi deneyimlemenin farklı yollarından biri de farklı duyulara hitap eden gastronomik unsurlardır. Bu araştırmada gastronominin nostaljiyle ilişkisi incelenmiş, bireylerin geçmişlerinde yer eden lezzetlere olan özlemleri saptanmaya çalışılmış, gastronomi-nostalji bağlamında literatüre katkı sağlanması hedeflenmiştir. Araştırmada gastronostaljik özlemleri belirlemeye yönelik olarak hazırlanmış mülakat soruları Balıkesir Üniversitesi Turizm Fakültesinde görevli akademisyenler arasından 19 kişiye yüz yüze görüşmek suretiyle yöneltilmiştir. Yarı yapılandırılmış görüşme tekniğiyle elde edilen veriler SPSS 24 ve NVivo 10 programları yardımıyla analiz edilerek yorumlanmıştır. Araştırma sonucunda bireylerin çok büyük bir çoğunluğunun geçmişe özlem duyduğu, özellikle çocukluk dönemlerine ait lezzet ve gastronomik unsurların hafızalarında anlamlı, süreklilik arz eden pozitif bir imaja sahip olduğu sonucuna ulaşılmıştır.
