Bilyalı kekik (Origanum Onites L.) uçucu yağı ile aromatize edilen rafine pirina yağının termal ve fotooksidasyonun incelenmesi

Özet

Bu çalışmada, bilyalı kekik (Origanum onites L.) uçucu yağı kullanılarak tat ve koku açısından nötr olan bir yağ olan rafine pirina yağının aromatize edilerek albenisinin artırılması ve elde edilen aromatize yağın termal ve ışık (fotooksidasyon) koşullarında depolama sırasında oksidatif değişimlerinin incelenmesi amaçlanmıştır. Bu amaçla, Balıkesir ilinde yetiştirilen bilyalı kekiğin uçucu yağı ağırlıkça 4 farklı oranda (% 0.05, % 0.1, % 0.3 ve % 0.5) rafine pirina yağına ilave edilerek aromatize yağlar üretilmiştir. İlk etapta aromatize yağların duyusal açıdan değerlendirilmesi yapılmış ve % 0.05 oranında uçucu yağ ilaveli aromatize yağ duyusal olarak beğenilmiştir. Duyusal olarak beğenilen aromatize yağ ve herhangi bir uçucu yağ ilave edilmemiş kontrol örneği, etüvde 60 °C’da termal oksidasyona ve güneş ışığında oda sıcaklığında fotooksidasyona uğratılmıştır. Termal ve fotooksidasyon koşullarında peroksit değeri, konjuge dien (K232) ve konjuge trien (K270) değerleri izlenerek örneklerin oksidatif stabiliteleri değerlendirilmiştir. 28 günlük termal oksidasyon sonunda kontrol ve aromatize yağ örneğinde peroksit değeri sırası ile 35.25 meq O2/kg ve 33.25 meq O2/kg; fotooksidasyon sonunda ise aynı örneklerin peroksit değeri sırası ile 28.50 meq O2/kg ve 26.25 meq O2/kg’a kadar artış sergilemiştir. K232 değeri termal oksidasyon sonunda kontrol ve aromatize yağ örneğinde sırası ile 8.52 ve 8.08, K270 değeri ise sırası ile 0.67 ve 0.76’a kadar artış sergilemiştir. Fotooksidasyon koşullarında ise de 28 günlük depolama sonunda kontrol ve aromatize yağ örneklerinde sırası ile K232 değeri 4.38 ve 4.48, K270 değeri ise 0.67 ve 0.76 olarak belirlenmiştir. İstatistiksel olarak kontrol ve % 0.05 uçucu yağ içeren aromatize yağın oksidatif stabilite açısından birbirine benzer olduğu belirlenmiştir. Sonuç olarak rafine pirina yağına % 0.05 uçucu yağ ilave ederek daha farklı ve tüketiciler tarafından tercih edilebilir bir yağ üretilmiştir. Ayrıca bu yağın termal ve footoksidasyon koşullarında rafine pirina yağ kadar oksidasyona dayanıklı olduğu ve depolama açısından benzer özellikler gösterdiği söylenebilir.

This study aimed to enhance the appeal of refined olive pomace oil, a neutral oil in terms of taste and odor, by aromatizing it using oregano (Origanum onites L.) essential oil, and to investigate the oxidative changes of the resulting aromatized oil during storage under thermal and light (photooxidation) conditions. For this purpose, aromatized oils were produced by adding the essential oil of oregano grown in Balıkesir province to refined olive pomace oil at four different weight percentages (0.05%, 0.1%, 0.3%, and 0.5%). In the first stage, the aromatized oils were evaluated sensorially, and the aromatized oil with 0.05% essential oil added was sensorially preferred. The sensorially preferred aromatized oil and the control sample without any added essential oil were subjected to thermal oxidation at 60 °C in an oven and photooxidation at room temperature in sunlight. The oxidative stability of the samples was evaluated by monitoring peroxide, conjugated diene (K232), and conjugated triene (K270) values under thermal and photooxidation conditions. After 28 days of thermal oxidation, the peroxide value in the control and aromatized oil samples increased to 35.25 meq O2/kg and 33.25 meq O2/kg, respectively; after photooxidation, the peroxide values of the same samples increased to 28.50 meq O2/kg and 26.25 meq O2/kg, respectively. K232 value increased to 8.52 and 8.08 in the control and aromatized oil samples, respectively, and K270 value increased to 0.67 and 0.76, respectively, after thermal oxidation. Under photooxidation conditions, after 28 days of storage, the K232 value were determined as 4.38 and 4.48, and the K270 values as 0.67 and 0.76 in the control and aromatized oil samples, respectively. Statistically, the control and the aromatized oil containing 0.05% essential oil were found to be similar in terms of oxidative stability. In conclusion, a different and consumer-preferred oil was produced by adding 0.05% essential oil to refined olive pomace oil. Furthermore, it can be said that this oil is as resistant to oxidation as refined olive pomace oil under thermal and photooxidation conditions and exhibits similar storage characteristics.
